6 tips to make your cheese last longer

Cheese is popular in many recipes, thanks to its versatility. However,a recipe rarely calls for an entire wheel or bag, and often times cheese is used as a garnish in pasta or salads, meaning that the remaining portion needs to be kept for a following service. As leading manufacturers and suppliers of cheese to the foodservice industry, we’d like to share our knowledge on how you can get the most from your cheese. These handy storage tips will ensure you keep your fromage fresh.

Perhaps the biggest blunder when storing cheese is storing it in cling wrap. This suffocates the cheese and causes it to harden. Some other things to avoid include storing multiple types of cheeses together, as this can result in an absorption of flavours. Freezing your cheese will also affect its texture.

1. Soft and semi-soft cheese:

Soft and semi-soft cheese such as Président Camembert, Double Brie and Triple Cream Brie is best stored in cheese or wax paper, in a sealed plastic container in the fridge. This allows the cheese to retain its moisture.

2. Aged cheese:

Harder cheeses such as parmesan are best kept in a cool, dry place, away from direct sunlight. Aged cheeses can last longer without over-fermentation so keep your aged cheeses wrapped in wax paper, sealed with tape.

3. Blue cheese:

Président Le Bleu, Gorgonzola and Stilton type cheeses are best kept refrigerated in aluminium foil. Blue cheese can last 6 weeks to 6 months depending on how they are stored – follow the directions listed on your pack.

4. Semi hard and hard cheeses:

Cheeses such as Swiss and cheddar are best stored in sealable containers in a vegetable crisper.

5. Fresh cheeses in water / brine

Cheeses like Lemnos Fetta and Haloumi are very easy to maintain. Just keep them refrigerated in their original packaging.

6. Mature cheeses:

Similar to mozzarella, mature white cheeses like fetta are best when kept refrigerated in a sealed container.
